Trends come and go, and that extends to our stomachs. We sampled pickles in a blanket and sipped on purple milkshakes in 2023, and Chicagoans found new restaurants they loved, or frequented old haunts. While it's impossible to know for sure what funky flavors or dining experiences will pop up in the new year, the Tribune asked chefs and restaurant owners in Chicago, many of whom are considered the best and most innovative in the business, about how they expect the city's food scene to evolve in 2024. From a focus on transparent pricing and social equity to an emphasis on fun, photogenic ingredients, here are some of their top predictions. And maybe, just maybe, "girl dinner" is here to stay. For pastry chef Leigh Omilinsky, her most recent creation has a personality. It’s particular, stubborn and judgmental. In other words, it’s quintessential Chicago. @daisieschicago, a Midwestern pasta restaurant in Logan Square, debuted its newest pastry — the Chicago-style croissant. The dish, which features a charred Vienna beef hot dog wrapped in a croissant, is a collaboration with @wienerscircle. The $8.50 croissant is also stuffed with yellow mustard, diced onions, celery salt and bright green relish. On top, there’s poppy seeds and a garnish of a cherry tomato, pickle and sport pepper. A coffee shop in the River North neighborhood delivers the warmth and substantiality of Kazakh culture as soon as the doors open. Enter Tary Coffee House and you’ll see elegant dishware, like wooden bowls and trays, and cozy rugs, all from Kazakhstan, as well as a special green cabinet that was used for generations as a refrigerator but now is symbolic decor. Tary Coffee House brings not only some of the sights but also the traditional smells of Kazakhstan with a selection of coffee, tea, baked goods, filling meals and more. Symbat Zharkynkyzy, 26, is the franchise owner of the local Tary and said it’s the first location of the chain to open in the U.S. Tary was the first of its kind in Kazakhstan even, Zharkynkyzy said. CosMc’s, a new futuristic concept from McDonald’s, secretively opened its first location near Chicago Thursday. The fast-food chain originally announced that the beverage-focused shop would open in Bolingbrook Friday. Named for CosMc (pronounced “cosmic”), a little-known company character (a space alien who visited the fictional McDonaldland in the late 1980s and early ’90s), the theme essentially throws back to the McDonald’s drive-in origin story. Though, instead of milkshakes and hamburgers, customers can now order popping boba slushies and spicy queso sandwiches. So how did it all taste? The Berwyn mainstay known as Vesecky’s Bakery is closing after more than a century of serving up Eastern European baked goods the old-fashioned way. The bakery at 6634 Cermak Road officially announced the closing on Facebook Monday morning. The post said Tuesday would be the bakery’s last day. By 9 a.m. Tuesday, owner Nancy Vesecky said the bakery was sold out. Customers had started lining up at 5 a.m., with the bakery opening at 6 a.m., and lines were “out the door,” Vesecky said. The first time Nick Kindelsperger chatted with Khaled Simon, his food truck, Taco Sublime (@tacosublimechi,) had recently caught on fire. This was in December 2021, and while it looked like his business was in serious trouble, he oddly didn’t sound defeated. “I feel like this sparked so much fire in me,” he said. “We are going to make it happen.” A year later, Simon and his partner, Haley Pham, had pivoted to cooking at pop-ups around town, including a semi-regular stint at Royal Palms, the gargantuan shuffleboard club in Wicker Park. That’s where Kindelsperger finally tried one of his signature cheese-crusted tacos. Instead of simply sprinkling cheese on at the end, he caramelizes a handful of Chihuahua cheese on a griddle until it transforms into a salty, crackly sheet. This is placed on a tortilla and then topped with thick-cut steak or chicken. After a few bites, Kindelsperger knew it’d make his list of the best tacos in Chicago. Fast-forward to 2023, and it’s easier than ever to try Taco Sublime. Simon and Pham now have permanent residencies in two bars, Marz Community Brewing Co. in McKinley Park and Desert Hawk in Ukrainian Village. And there’s also a restaurant on the way. But another item on the menu has started to attract attention of its own. Taco Sublime’s smash burger is one of the most exciting burgers Kindelsperger has tried in 2023. At 78, Chicago business owner Marvin Barsky is at the peak of his career. It wasn’t his heyday as a NASCAR speedway baron, or his gilded age as a shared office space tycoon. In January, he cinched the opportunity to become the first new owner of The Bagel Restaurant and Deli in 54 years. “I was nervous, to be very honest. At my age, I gotta be nuts to do it,” said Barsky, who is avoiding retirement to run the schmaltzy deli he frequented as a child. “But this type of food is a tradition to me. I feel a responsibility to keep it going.” The Lakeview landmark’s late owner Danny Wolf died in July 2022 at 77, leaving a legacy more enduring than just about any other Chicago deli. Veah Larde was destined for the role she took over this year. “I tell people all the time, I’m from this dirt. I’m an Austin girl, born and raised,” Larde said. The chef and resident of the West Side Chicago neighborhood put her busy catering business on hold to take over as manager of Austin Town Hall Market for the season. “I’ve seen the different transitions that the neighborhood has gone through,” she said. During his inaugural address, Mayor Brandon Johnson called their home turf “the beautiful Austin neighborhood on the mighty West Side of Chicago.” Yet he added, “And the very fact that the mayor of Chicago lives in one of the most disinvested and violent communities in the city, it shows us what’s possible. Chicagoans favor an aggressively seasoned, coarsely ground sausage that’s stuffed into a natural casing with an epic amount of garlic and then smoked. Usually, it’s made of a mix of pork and beef, though not universally. Most restaurants griddle it on a flat-top to crisp up the casing, though some prefer a level of crisp attainable only by dunking it in a deep fryer. Placed in a bun, the sausage is traditionally served with a swipe of yellow mustard, a heaping pile of soft sauteed onions and a few spicy pickled chiles.
